The buzz of Elgin. The Cape Honey Bee Conservancy working our hives

The hardest workers on our organic farm don’t wear boots or drive tractors. 🐝

They arrive with wings, a serious work ethic and absolutely no interest in meetings.

Bees are an essential part of a healthy regenerative ecosystem, and thanks to our friends at the Cape Honey Bee Conservancy we have a number of thriving bee hives at Radford Dale organic estate in Elgin. As they move through our vineyards and surrounding vegetation, bees pollinate flowering cover crops and other plants, helping to support biodiversity and encouraging a richer, more resilient environment.

Those cover crops do far more than look pretty. They help protect and improve the soil, support beneficial insects and create habitats for life both above and below the ground.

For us, organic farming is not simply about what we choose not to use. It is about creating an ecosystem that can work together.

Healthy soil. Diverse plant life. Beneficial insects. Bees doing what bees do best.

Because the more life we encourage in our vineyards, the better equipped they are to thrive naturally.

And if you listen carefully in Elgin, you might just hear the sound of a regenerative farm at work. 🐝

Classic Moules Marinières with Aioli & Croutons

Bring the French Riviera to African soil with this classic mussel recipe steamed in white wine, garlic and a dash of cream, best served straight from the cooking pot with fresh or toasted bread and lashings of aioli.

Beef Carpaccio with Wholegrain Mustard Vinaigrette & Shaved Aged Huguenot

There are few platters more elegant than a generous carpaccio starter, using a top quality fillet of venision or beef. Ours uses premium beef fillet and is topped with a zesty wholegrain mustard dressing, punchy rocket leaves and a generous amount of shaved aged Huguenot cheese

Chicken Schnitzel with Truffle Crisp Crust, Vegetable Purée & Dill Sauce

Nothing beats a comforting, crunchy schnitzel. But perhaps this version is levelling things up to the max, using Rootstock’s hand-made Summer Truffle Crisps in the crust, served in a silky bed of cauliflower puree and a drizzle of creamy dill sauce.
